I have two pieces of iron cookware Lodge cast iron. He and 12 of the "non-self preseasoned conditioning stove. I must add my voice to the chorus of admirers cast who do not know how you survived without their Lodges. I do 80% of my kitchen with one or the other. steaks, burgers, any kind of recipe for fried chicken, stir fry, fajitas, corn bread, bacon and eggs, pancakes, french toast, grilled cheese sandwiches, and so on.
Main strength of cast iron is due to its mass. this Cast Iron Skillet is essentially a large piece Honkin 'formed by iron cookware. This large amount of metal, when heated, will tend to evenly distribute heat and keep warm, no matter what you put into it. In addition, once properly conditioned (which Lodge has done for you here) are almost as non-stick as teflon.
Unfortunately, the cast is not without flaws. Its greatest strength can also be its greatest weakness is much heavier than other types of cookware. This tank weighs about 6 pounds. Imagine
trying to pick up that plus the weight of all that I cooked in it, a
hand-made oven so you can use a spoon in the other hand to help maneuver
your recipe in a bowl or a storage container! If
you have weak hands or arthritis or any other condition that limits
their ability to collect and manipulate heavy objects, can not be a good
choice for you.
In addition, iron rust if not properly maintained. Lodge offers operation and maintenance are not complicated or difficult, but it must be followed to the letter. Read the instructions carefully when you receive your bread. No dishwasher, no soap (just hot water and a stiff brush), dry quickly and cover with cooking oil.
I read some reviews where people say you can not cook tomato-based products acids or iron. While
this may be true, I have never found a authoritative source to
corroborate this and, in fact, the Lodge website (lodgemfg.com) offers
recipes that contain tomatoes and acidic ingredients! Regularly add tomatoes, tomato sauce, wine, lemon juice, etc. in my cast iron and have not seen the negative effects of it.
